Waffles are my all-time-favorite breakfast food! Hands down! I’ve been cooking/baking gluten free now for about 9 years, and sometimes I still think, “I just want to have waffles that taste like I remember growing up!” You know, those fluffy, moist, sweet bread waffles with a mound of butter and smothered in syrup! I’m drooling now… You get the picture! Well, these waffles come pretty close to how I remember waffles growing up. Now, I’m not going to go and tell you that they taste or resemble wheat waffles all together, because let’s face it, gluten free is different! And most of the time, using certain flours doesn’t give the same consistency as wheat flour. But, I do really like this simple recipe! And I thought I’d share it with you!
Keep in mind, the batter always does better if you give it time to ‘soak’. So if you have extra time to do this, I highly recommend it. But, they will turn out very yummy otherwise.
Let’s get started!
First, I start by preheating the waffle iron. I turn it to the max setting, and I find it gives them the perfect golden color! **You may have to experiment on your waffle iron.**
Next, combine your gluten free flour in a medium bowl.
Third, add the sugar! Don’t forget the sugar!
Next, add baking powder! This will help the waffles to be fluffy. **You can also use A blend of baking soda and cream of tartar for a corn free option. Conversions below.**
Next, add salt! I love using Pink Himalayan Salt. It’s got so many minerals and other benefits in it!
After whisking the dry ingredients, then add the eggs.
Then, oil or butter.
Next, add the milk. I’m using Almond milk here, but you can use any type of milk you choose!
Lastly, add some vanilla. This is optional. Sometime I like to flavor my waffles with a little cinnamon and nutmeg to change things up.
Next, whisk all the ingredients together with a fork. The batter should have air bubbles. And don’t worry about trying to get all the lumps mixed in, they will disappear when cooking the waffles.
Now, you can pour into your waffle iron and cook according to the manufacturer instructions. When they’re done, serve warm with a pat of butter and some delicious sweet maple syrup! Yum! Or, if you like a little extra excitement, add spread peanut butter on your waffles with a little yogurt and a blueberry sauce on top! Make it your own and enjoy!
Gluten Free Waffles
Ingredients
- 1 1/2 cups gluten free flour (I use rice flour in this recipe)
- 2 tablespoons of sugar
- 1 tablespoon of baking powder (or 1/2 T. Baking soda & 1/2 T. Cream of Tartar)
- 1 teaspoon of salt
- 2 eggs
- 3 tablespoon of olive oil (or butter)
- 1 1/4 cups of milk (any milk will do)
- 1 teaspoon of vanilla (optional)
- sprinkle of cinnamon & nutmeg (optional)
Directions
- Preheat your waffle iron. I use the highest setting on mine, you may need to experiment with yours.
- In a medium bowl, whisk your flour, sugar baking powder, and salt together.
- Add eggs, oil, milk and vanilla.
- Mix throughly, but don’t worry about getting all the lumps mixed in completely.
- Soak your batter for at least 15 mins. The longer the better (optional)
- Cook according to your waffle irons instructions.
- Serve warm with a pat of butter and some maple syrup.
