If you’ve been looking for a gluten free bread recipe, look no further! This is the best bread recipe that I’ve tried so far. It is moist, airy, light, and tastes just like wheat bread. Oh, and it’s dairy free and you would never know it! Not kidding! But, first things first, let me mention that my mother-in-law came up with this recipe, and so she gets all the credit! She has been baking/cooking gluten free for many years and has so much experience in gf baking. She’s had to adjust her cooking to accommodate many allergies in the family, and it’s always so tasty! She is always willing to share her recipes! In fact, the majority of recipes I use are from her! She’s amazing and I’m blessed to call her Mom.
Things to know before starting
First of all, this recipe uses different varieties of rice flour and starches. Don’t get freaked out, these can be found at most Health Food Stores or online. I promise you it will be worth it!
Next, you can use a stand mixer or a bread machine. I will be explaining the method using a stand mixer. However, I will briefly touch on the bread machine usage. *See notes at bottom of post.*
Last, you can use a standard loaf pan (8 1/2″x 4 1/2″x 2 1/2″). Or 3 mini loaf pans (5 1/2″x 3″). My mother in law like using the mini loaf pans. They seem to be a little lighter in texture and stay fresh longer.
Now, let’s get baking!
First combine all your dry ingredients in a large bowl.
**Please Note: Do not allow the yeast to touch the salt! This will kill the yeast. However, you may whisk everything together and the yeast will be fine.**
Next, in the mixing bowl (from your kitchen aide or stand mixer) combine the eggs, oil and molasses (optional) together with a fork. Then, in a slow, steady stream, temper the egg mixture as you pour in the HOT (boiling) water whisking constantly so the eggs do not cook.
Add your flour mixture to the wet ingredients.
You will want to use a dough hook to mix the dough together.
Turn your mixer on low and combine ingredients as you scrape the sides down. Then turn your mixer on med/high speed for eight minutes.
After mixing the dough, your dough will be very sticky.
Using a rubber spatula, spread the dough into a greased loaf pan. Pat down the dough and smooth the top with a little water to keep the dough from sticking to the spatula.
Allow the dough to rise while the oven is preheating to 375 degrees. About 30 mins.
After 30 minutes, the dough should have raised not quite double. Don’t worry, it will raise in the oven. Bake for 30 minutes. If your bread is browning fast, you can tent some foil on top to slow that down. But the top should be a firm crust and sound hollow inside when tapping the top.

Amazing Gluten Free Bread (Dairy-Free)
Ingredients
- 1/2 cup long rice flour
- 1/2 cup sweet rice flour
- 1/2 cup tapioca starch or arrowroot powder
- 3/4 cup ground flaxseed
- 3/4 cup millet flour
- 2 Tablespoons whole psyllium husks
- 2 1/2 teaspoons active dry yeast
- 1 teaspoon xanthan gum
- 1/2 Tablespoon salt
- 3 Tablespoons sugar
- 1 Tablespoon molasses (optional)
- 3 eggs
- 2 Tablespoons olive oil
- 1 1/3 cup HOT (boiling) water
Directions
- Combine all dry ingredients in a large bowl (including the sugar). *Be careful not to let the yeast touch the salt. This will kill the yeast. However, whisking all the dry ingredients together, the yeast will be fine.* Set aside.
- In the mixing bowl (kitchen aide or stand mixer) combine eggs, oil and molasses (optional).
- Slowly add the boiling water to the egg mixture in a slow steady stream to temper the eggs. Whisking constantly with a fork.
- Add the flour mixture to the egg mixture.
- Using the dough hook attachment, turn on low to combine while scraping down the sides of the bowl.
- Then mix on med/high speed for 8 minutes.
- Spread dough into a well greased loaf pan. I use a standard loaf pan or you can use 3 mini loaf pans.
- Wet the spatula with water to spread and smooth the top of dough in pan.
- Set in a warm place while oven preheats to 375 degrees. About 30 minutes.
- The dough should have risen not quite to double. Bake for 30 minutes until golden brown. The top should be a firm crust while inside should sound hollow when tapping on top.
Notes: You can use a bread machine, just combine your dry and wet ingredients as above instructions, then add egg mixture to the bread pan then dry ingredients on top. Use basic setting on bread machine. I like using this method, but I feel like the bread get a little overdone, and is not so light and airy. But still very yummy!
